Here's a simple treat:
3/4oz dry vermouth
1oz hendrick's gin
1/4oz sambuca or ouzo
and a few shakes of these mint bitters.

put over ice and stir.

you'll end up with an absinthe-like beverage that is milky, vaguely anise and mint and funky (in a good way).
